Almond Flour Waffles
Almond flour is a favourite in my household. The pantry gets restocked every few months. My husband and I agree that almond flour officially makes the best waffles, pancakes and muffins. Also, while I’m no chef or professional baker, I do love the kitchen and experimenting where I feel comfortable.
The Power of the Waffle
Firstly, I love my waffles crispy or with a slight crunch. After making a batch, I pop them in the toaster for a couple of minutes to get a little crunch. Also, I have to tell you that the texture of this almond flour is interesting but so satisfying. It gives a slightly grainy taste that contributes to the yummy texture of this waffle.
What Makes this Waffle so Good?
Secondly, there’s a lovely secret, or not so secret ingredient for these waffles. Eggs! Yes, eggs make almond flour perfect! Whether you’re making waffles, pancakes or muffins, eggs come in as a super handy ingredient. It gives almond flour that lightness it needs to feel just right in the mouth. If you’re vegan, you can use your best egg alternative/s etc. I haven’t tried this recipe vegan style yet so I can’t say for sure.
Why Almond Flour?
Thirdly, I guess I like to try alternative flours and the different ways that I can make them work. While I think white flour does a great job of making just about anything, I do enjoy some healthier alternatives and almond flour is my favourite. The brand I usually use is Kirkland.
Simple Recipe!
Simple recipes are life! Additionally, simple recipes make cooking much more fun for me. The idea that I can whip this delicious thing up in a short or reasonable space of time is great. Furthermore, I usually keep my food dairy free and I’ve found so many good dairy free alternatives that work well.
Ingredients:
-1 and 1/2 cups almond flour
-1/2 teaspoon baking powder
-dash of salt
-2 eggs
-2 cups unsweetened almond milk or coconut milk
-1/2 teaspoon agave or honey
-1 teaspoon vanilla extract
Instructions:
Plug in your waffle iron and allow to preheat. I like to set mine to about medium to high heat. Also, butter before pouring waffle mixture.
In a large bowl, whisk together the dry ingredients.
In a medium bowl, whisk together the wet ingredients.
Pour the wet ingredients into the bowl with the dry ingredients and mix together. Your mixture should be nice and moist. It should also be able to be easily poured onto the waffle iron. The mixture should not be stiff or dry.
Tips:
If you’re dealing with dryness, add a little more milk. The waffle iron that I have cooks my waffles within a few minutes. Around 3 minutes. It all depends on the type of waffle maker you have. I like my waffles a bit crispy so I sometimes pop them in the toaster oven after. When removing from the waffle iron, try using a butter knife or something thin to pop them out easily.
Finally, serve waffles with your favourite toppings!
